The whole menu goes through our charcoal and wood burning Bertha oven, the first of its kind in Brighton, the Bertha oven is a British built oven inspired by northern Spain.
Using the best local ingredients, simply grilled and smoked over flames at high temperatures to bring out the natural flavours of the food we work with local producers as much as we can which includes ‘Redlands Farm’ for our Sussex Crossed Heifer, ‘Godalming Farm’ for there plantation pigs reared on the south downs, the ‘Flour Pot’ Brighton bakery, locally fished stock from Brighton and Newhaven and the ‘Cheeseman’ also from Brighton.
